Making chocolate in warm weather

When making chocolate turns into an addiction you make it whatever the weather.  Living on the Gold Coast can present challenges like record breaking hot weather which is not the ideal when trying to temper your chocolate and keep temperatures precise.  The airconditioner is working overtime whilst I make a batch of Chocky Road and Chocolate Sticks.

Preparation is the key, get the airconditioning on early to keep your work place cool and use ice to cool down your marble bench top if needed.
